I was wondering what the latest laws are regarding alcohaul consumption in "The Channel" at lake Havasu. Thanks!

I don't believe there are any restrictions on consuming alcohol in the London Bridge Channel, except that glass bottles or containers are not allowed on the beaches.
There are no restrictions aboard a boat underway (not beached or moored), but the operator cannot be "Impaired".
Below a .04% BAC, the law presumes that a person is NOT impaired. .08% BAC or above, the law presumes that a person IS impaired. .04% to .08% BAC there is no presumption either way, but can be found impaired based on observations, vessel operation and performance on field sobriety tests.

Hi Alan, In the channel, on the island side, from about 50ft on north side of the restroom bldg, (next to dog park), going all the way south to the bay, are Alcohol Prohibited signs. Have been told my others there to disreguard them if your in or by your moored boat on beach. Having a hard time believing this.

Who owns the property there?
If it belongs to a private business or enterprise that doesn't have a liquor license, or has a liquor license that doesn't permit outdoor consumption on the property, then that could be the reason.
If a business (like the Nautical Inn, for example) has a liquor license that doesn't permit outdoor drinking, then it's against their license to drink outdoors on their property. If they allow it, then their license could be pulled.
Posting signs covers their rear. Being in a boat technically isn't on their property, so it wouldn't apply.

Now I'm more confused. Thought it to be city, county, or state. There are no business's, just beach. Would one of the LEO's on site there know better? Maybe the sidewalk is a boundry?

There is a State law against drinking alcohol in public in Arizona. But it doesn't apply to a person consuming beer from a broken package in a public recreation area or on private property with permission of the owner or lessor or on the walkways surrounding such private property.
The County has no ordinances regarding liquor. Even if they did, County ordinances don't apply within the limits of an incorporated city or town.
Lake Havasu City has an ordinance against drinking or possessing alcohol in any city park. If that area is part of the LHC park system, then there's your reason. Check the signs next time you're there. It should have the ordinance or statute number printed on it.
